Many bakeries have switched to plastic Bakery Tray and are now enjoying increased efficiency and a reduction in the operating costs. Some of the benefits that have been encountered are the fact that the Bakery Tray does not require any additional coating for protection and has no potential for corrosion that will require the Bakery Tray to be taken out of service. Its overall weight is lighter than other bakery trays made from either stainless steel or glass which facilitates handling. The plastic Bakery Tray has also become a more attractive option for bakeries in terms of maintenance and tray usage as they do not have to be sent regularly for recoating and cleaning.

It does not seem possible since plastic is considered not strong enough to withstand heat; however, there those that go from the oven straight to the display. Metal Bakery Tray
Metal baking trays are quite common and they usually have the non-stick coating so it would be easier to remove baked bread or food that tends to stick to the sides and bottom. Metal trays are designed so that heat is spread evenly and quickly across the base. Those that do not have the non-stick coating must be kept in dry conditions in order to avoid rust. It is also suggested not to use metal utensils on metal baking trays because they might damage the surface. Thinner metal bakery trays are more prone to warping in high temperature so that thicker trays are advisable. When new, the stainless steel bakery trays have the shiny pleasant appearance but it does not last long and recovering their previous shiny appearance will mean a lot of efforts and hard work.
Glass Bakery Tray
Glass bakery trays are seldom used because they tend to be more expensive but according to those who have experienced using the glass bakery trays for baking prefer the material because it conducts heat more evenly across the base of the tray. However, the glass bakery trays should not be subjected to sudden changes in temperature and should be allowed to cool before placing it in cold water.
